I am going to geek out for about two seconds and sit in my rocking chair and talk about the weather.  (Shhhhh, don't judge.).  I am always whining about the summers here in Phoenix but now it's time for me to sing its glories.  When fall lands, this is when I start bragging about WHY I live here and how much I love this glorious desert.  The mornings are a perfect 71 degrees and the rest of the day is warm but... IT'S UNDER 100 DEGREES!!!! 

This means I can cook without breaking into a sweat and dying inside.  And I can eat #allthepasta.

In celebration of fall arriving and my desire to turn on my stove and oven- here's an amazingly easy but oooohhhhh so yummy Southwestern Black Bean Penne Alfredo recipe.   I promise it's super yummy.

There are Bush's black beans, fire roasted corn, tomatoes, cilantro, jalapenos, and taco seasoning in the creamy alfredo sauce.  Throw on some delicious chicken and it's the PERFECT meal.  My 14-year-old daughter who would eat orange chicken and peanut butter and jelly sandwiches EVERY. DAY.  (not an exaggeration, either) loved this and asked for seconds (SCORE!).

Of course, you can skip the chicken because Bush's black beans provide protein.

I told y'all when I shared my mini taco bites recipe that I always have beans in my cabinet because of how versatile they are! Bush's beans are so versatile and even more so come fall- chili beans, pinto beans, great northern beans, black beans, and their varieties are endless!  I love being able to just pull out a can of beans and make bean tacos, hummus, you name it! Inexpensive, healthy, and tasty- that's why I am #TeamBeans.  Of course, you can find Bush's beans at your local Wal-Mart (along with EVERYTHING you need to make this recipe!)

That's what makes this recipe great- skip the meat or not- either way, you have a delicious meal and will still have protein.  Meatless Monday? Done!

Southwestern Black Bean Penne Alfredo Recipe
Pasta is a perfect fall comfort food and even better when you give it a bit of southwestern flair. This Southwestern Black Bean Penne Alfredo Recipe is perfect for fall!
Ingredients
  • 15 ounce can Bush's Black Beans, drained
  • 16 ounce jar Alfredo sauce
  • 2 cups fire roasted corn
  • 3 roma tomatoes, diced
  • two jalapeno, diced & seeded
  • 1/2 bunch cilantro, chopped
  • 16 ounce Penne Pasta
  • 3 breasts chicken, cooked (optional)
  • 2 tbsp, divided taco seasoning
Instructions
1. Prepare pasta as directed on packaging2. If using chicken, while pasta is cooking- sprinkle chicken breasts with taco seasoning and cook over medium until no longer pink. Set aside and allow to rest 5 minutes and then chop into pieces.3. In a bowl, mix together alfredo sauce, beans, corn, tomatoes, jalapenos, cilantro, and remaining taco seasoning. Set aside.4. Drain pasta in a colander and leave in the colander. Place pasta pan back onto the stove.5. Over medium heat, pour alfredo sauce mix into the pan and heat until bubbly and warm. 6. Mix together pasta and sauce mix. 7. Serve immediately and if with chicken on top.
