In January, I set some goals that I really thought I could meet/exceed them.  I have also set my February goals and am also sharing with you some great tools to help your blogging sanity and some easy resources to make extra cashola.

Win-win, right?

January Goals- update.

You can read the original post here.

My first goal was to read two books in January.  I have only read ONE.  Waaaaahhhh.  Yep, I feel like I failed but it's okay.  I finished ONE book and I am happy with that.  It's not one book a week but I read and finished "Daughter of the Gods" by Stephanie Thornton.

Asian food is seriously my all time favorite food.  Thai, Japanese, Indian, Vietnamese, Malaysian, etc.- you name it, I love it.  I haven't met one I didn't like.  I like Americanized versions and traditional meals.

When I learned that I was allergic to shellfish, I was devastated BUT I learned to start making my own versions of restaurant dishes at home.  Home-cooked is SO much better, of course.  It makes it easier to control what's in it, prevents cross contamination and of course, I can make it anytime I want!

One of my favorite dishes is Mongolian Chicken and this recipe I made is MUCH better than any I have had in a restaurant, thanks to the extra flavor of pineapple.

Clinical Scrubs: Style + Function (Plus a Giveaway!), Landau Scrubs Review
This post about stylish and functional scrubs has been sponsored by Landau Scrubs

Since I was in junior high school, I have been involved in one way or another in the medical field.

My journey began when I joined the American Red Cross Junior Volunteers the moment I turned 13.    I spent my Saturday mornings beginning at 5 am with my mom helping at the nursing home she worked at and then at 7:30 am, I would walk to my hometown hospital to begin my 8 am shift as a volunteer.  My duties entailed helping the nursing staff any way possible- delivering meals to patients, helping run messages and a variety of other duties.  Within a few years, my time with the American Red Cross junior volunteers I was promoted and voted into a secretarial position and then to president.

I thought that I would eventually become a nurse.

Part I: The Deepest Losses in Life

The photo above is old.  It's from September 2000.  It is at a funeral- my first born daughter's funeral.  I was 22 years old.  Little did I know, I would bury another child and almost a third daughter.

I like to know what’s in the products I use in my home. One of my goals in 2017 is to rid my home of all toxic supplies and creating a completely toxic-free home that is good for me and my special needs daughter.

I am a little late to the party.

I can blame it on being sick (Let me tell you, bringing in the New Year sick was NOT fun and then working the entire week sick was ... sucky) or I can be 100% real and say it - I had no clue.  I was thinking, stewing, percolating, etc. on what I want my goals for 2017 to be and then I realized I just don't want to think about 2017 as a whole but rather, in monthly chunks.  I feel that monthly goals are so much easier to work with and more attainable.

Mid-2015- present has been rough on a personal level for me.

I want 2017 to be on a positive yet health note and with that being said (drum roll, please)- here are my personal/professional goals for January 2017

Easy Honey Chipotle Chicken Wings Recipe

It's here- FOOTBALL SEASON!!! Of course, the big game is right around the corner and the big game requires big eats for football parties.  After all, what is a tailgating or homegating party without food? Lots and lots of food.  Of course, the spread MUST have wings.  You can't have football without wings!

Of course, add these honey chipotle chicken wings to shake up the rotation.  They're sweet, they're smoky, a little spicy and a whole lotta delish.
