I love a good, hearty breakfast.  My all-time favorite is biscuits and gravy.  Anytime I go to a new breakfast restaurant, I always order their biscuits and gravy with diced potatoes.  This is me judging the entire menu- if these three aren't amazing, I won't return.


Recently, I went to a local eatery and ordered their sausage gravy over diced potatoes.  It wasn't traditional gravy.  Nope. Not at all.  It was a  Mexican chorizo sausage gravy and I instantly fell in love.  I just HAD to recreate it ASAP.  Except... I hate peeling and dicing potatoes.  

I really, REALLY hate doing it.  It's not hard to do but it's seriously my least favorite thing to do in the kitchen.  However, I do shortcuts.  

Simply Potatoes®.  They're bomb! I grabbed the Simply Potatoes diced potatoes with onions and I am good to go.  No peeling, no dicing, just fresh, real ingredients that make cooking super easy.  


I have been buying the shredded potatoes for some time now and I have to say the diced potatoes are now my favorite of the two! I still need to try their mashed potatoes but I already know they're going to be good! 

I like using easy products like Simply Potatoes, especially when they're GOOD ingredients.  I am all about saving time!

I find that Mexican Chorizo is kind of sweet and spicy but oh my god, so tasty.  I love a chorizo breakfast burrito but my dear readers, make this gravy.  You won't regret it.  The flavor is so much more intense.  The gravy turns an orange hue and it's gorgeous.

I love just how fast this came together.  I started the potatoes first and then the gravy.  The timing couldn't be more perfect!

Chorizo Sausage Gravy
This isn't your typical sausage gravy - it's even better
Ingredients
  • 1 pound chorizo sausage
  • 2 tablespoons all purpose flour
  • 2 cups whole milk
  • just a pinch- to taste cayenne pepper
  • to taste ground black pepper
  • 1 bag Simply Potatoes diced potatoes with onions
  • 2 tablespoons (optional) Butter
Instructions
Start the potatoes first.  Follow the instructions and when it's time to put on the lid, start the gravy! The potatoes take about 12-15 minutes to cook, they should finish right about the time the gravy does or just a little after.  In a large skillet, start preheating over medium.  If using butter, go ahead and put it in the skillet now to melt and then add the chorizo.  If not using butter, add chorizo to pan now. Over medium heat, cook chorizo until browned (about 4-5 minutes)With a slotted spoon, remove chorizo from the pan and place onto a dish.  Reserving two tablespoons of the oil in the skilletAdd flour and cayenne pepper to the oil.  Stir for 2-3 minutes (cooking off the raw flour taste and creating a roux)Whisk in milk and heat to bubbling.  Allow to gravy simmer (while stirring constantly) until thickened.  Return chorizo to the gravy.  Add black pepper, if desired.  The gravy will continue to thicken, if it's too thick, just add more milk until it's to your desired consistency.  Serve immediately over diced potatoes and enjoy!
