Easy Spicy Korean Chicken Noodles


I am so freaking addicted to Pinterest and Instagram.  I get so much inspiration from scrolling through my feed.   From recipes to clothing to crafts, there are so many talented and creative souls out there.   Kudos to you! You all inspire me to create and to come up with new ideas every single day!  As a matter of fact, this recipe for spicy Korean Chicken Noodles was inspired by the many amazing Korean recipes I saw in my feed.  It's not an authentic/traditional recipe but it's tasty!!!



Speaking of apps.




I am sure you already know but I am a huge fan of Walmart Family Mobile (read my posts here).  I was quite sad that I dropped my phone not once but twice.  I am also a ding dong who didn't put a case around it.  So, needless to say, the screen was cracked badly and I needed to replace it.  Off to Walmart I go...

 This is a smart way to invest your tax refund money!  There are so many great phones on rollback and the price is just right on the service charges! Don't spend a TON of money upgrading your phone (or one for EVERY family member) and then you can invest the rest of your refund in savings or other big projects.  

Can't beat it plus the free movie rental on Vudu? Score.  I love Vudu.  I stream movies and television programs with my Roku 2.  I am a movie hoarder and I buy my blu-rays with the codes to watch the digital version in my bedroom.  Vudu sometimes has some SMOKING deals on movies to buy or rent.   With this FREE rental with my service, I plan to have some AWESOME movies nights with some AWESOME food.  Like some Star Wars and Spicy Korean Chicken Noodles and allllll while streaming on Vudu. 

I am a bit of a Vudu fangirl... so, um, yeah *clears throat* 

I digress.... 

I am loving the Grand Prime.  It's an awesome phone.  Nice, big screen and the camera is fabulous.

Easy Spicy Korean Chicken Noodles



So.  The Spicy Korean Chicken Noodles that I love to eat whilst streaming movies with Vudu.  


Yep.  


I am getting to it.  These noodles make for a great lunch for work the next day.  I added crunchy cabbage and scallions to it for extra texture and flavor. 


I used left over chicken from a recipe from RasaMalaysia that I found on Pinterest (obviously!).  I didn't have limes and used lemon instead but it's sooo good.


Now, here's the recipe for the Spicy Korean Noodles

(Adapted from SeasonwithSpice.com)

Sauce:


2 tbsp spicy Korean chili seasoning (You can use a mix of gochugaru and sesame seeds)

2 tbsp. Tamari Soy Sauce
1 tbsp rice vinegar
1 tbsp honey
1 tbsp toasted sesame oil
1 tsp water


1 package of noodles (Udon or any Asian noodles.  I didn't have any, so I used thin spaghetti noodles)
3 green onions (scallions) sliced.
Chopped cabbage
Grilled chicken (or shredded!)

1.  Place all sauce ingredients in a jar, close the lid, shake well.  Set aside.

2.  Prepare noodles according to package and drain.

3.  Add chopped cabbage to hot noodles and stir (to help soften the cabbage a little bit).

4.  Add sauce and stir to thoroughly coat.

5.  Serve noodles with sliced grilled chicken and garnish with scallions.
