Happy Birthday To Me + Ugly Food.

Last Friday was my birthday.  There were parades in my honor.  I kissed babies. Confetti everywhere! Champagne was flowing!  It was a great day.

Oh wait.

That was a movie.  Darn it!




It was a pretty good day, considering I had to work.  Well, at least it was only half a day for me because I had our annual meeting with Emma's DDD (Department of Developmental Disabilities) coordinator and her DTT (Day Treatment and Training) program to make sure Emma's services are in place and we have realistic goals set.  I always hear horror stories about DDD coordinators being hardasses but we've been lucky- we love our coordinator and if willing, she will continue to be our coordinator until she ages out at age 21.   We ended early (10:30 am) and I didn't have to be to work until 1 pm.  I took myself birthday shopping! I had amazing restraint.  Oh wait.  That was not restraint... cash flow issue.  My bank account would not agree with me.  Ha ha.

I bought myself a super cute turquoise dolman sweater and slouchy crop pants from New York and Company (Awesome sale last week!).  I also treated myself to some Victoria's Secret (thank you semi-annual clearance sale).  Also, if you are a Sephora Insiders member- you get a freebie during your birthday month.  This month is a MakeUp For Ever mascara and lipstick! Pretty sweet! I also got myself a Too Faced Brow Kit and Sephora cat eye brushes.  I did also buy myself the HAIM CD (It's AMAZING).  Sorry for the crap photos :)



I am a huge proponent of buying yourself gifts.  *wink*

On Thursday my coworkers brought me a delicious chocolate cake! Yum.  Which, of course, I ate allllllll weekend.  My sister picked up the best green chili burritos in all of Phoenix from our awesome spot- Rito's.  Seriously.  The. Best. I was lazy.  I watched Babylon 5 most of the weekend.  I did have plans of doing a ton of laundry but some douche broke into the laundry facility in my complex and it was closed for a week.  Thanks douchecanoe!

What is ugly food, you ask? Why did I mention ugly food in the title?

Relax and I shall tell you my story of ugly food.

I found this recipe on Pinterest for Coconut Chicken last night.  Easy.  Simple.  It was after work.  Win-Win.  Right?

I made it.  Very easy.  I added crushed pineapple to the recipe (I mean- it's coconut chicken! Coconut and Pineapple were MADE for each other).  It was deeeeeeeeeeeeelicious but ugly.  No.  Not just UGLY.  I mean FUGLY.  FUUUUGLY.   Granted, I have poor lighting in my apartment (I really need to invest in some good quality lamps) but still... ugly.  Haha.

Isn't that lovely?  The blogger's photo is beautiful, the food looks delicious and I wanna eat it.  That's what sucked me in to making the recipe.

BUT... BUT it was absolutely delicious.  Don't be turned off by the hour in the oven... it was incredibly moist.  It was really, really, really delicious.  I think I will add it to my new favorites.  I can't stop giggling how ugly mine came out.

  5. I always tried to get my birthday off, but at least you only had a half day so that worked out well! And yea for birthday shopping! I'm a firm believer in treating yourself well for your birthday! Had to laugh at the ugly food. Most of the crafts I try from pinterest turn our fugly, so I feel your pain. But her, at least it was tasty! :)
